Chicken Saltimbocca Pizza

Chicken saltibocca is one of our favorite pasta dishes.  Its what Chris wants me to make when ever we have people over so I decided to try making a pizza version.  I made my own pizza dough but you can use store bought too.  The sauce is very versatile so you can switch up the toppings. 
Pizza dough
Sauce:
3/4 cups of cream
1/2 cup of milk
2 tablespoons of flour
juice from 2 lemons
1 cup of Parmesan cheese
2 tablespoons of butter
3 cloves of garlic
salt and pepper
capers
(Lemon and capers can be left out for different kinds of pizza)
Toppings:
chicken (Flour, salt and pepper to fry up) You can also use shredded chicken
fresh sage
1 cup of mozzerella
prosciutto ham

Take about half a cup of flour and whisk in some salt and pepper.  Cut chicken into bite sized pieces and toss in flour.  Place in a hot skillet and cook for about 5 min per side until golden.  When the chicken is done use a spatula to cut pieces even smaller if desired.  Remove chicken from pan.
Melt butter in the same skillet and as it does scrape up the bits from the chicken.  This will add to the flavor of the sauce.  Whisk in the 2 tablespoons of flour.  Whisk until smooth and cook for 30 seconds.  Add in cream and milk.  Bring to a simmer and garlic and salt and pepper.
 When the dough is risen and you are ready to assemble the pizza stir in cheese, juice in lemon juice, add capers and adjust the salt and pepper as needed.
Pre heat oven to 425.
Spread out dough onto pizza stone and pour on sauce.  I like a lot of sauce and it will thicken up in the oven so a lot is okay.  Sprinkle cheese on top.
Sprinkle on chicken and torn pieces of priscuitto.  Top with lots of fresh sage.  Let rest for 20 min.  Bake at 425 for 20 min or until golden and bubbly.
After baking let rest for five min so it won't be so runny when you slice.
