2 cups of hashbrowns
1 bell pepper
1 onion
4 oz of sausage
a couple slices of deli ham
6 eggs
pepper jack cheese
1/2 teaspoon of red pepper flakes
1/2 teaspoon of chile powder
salt and pepper
milk
1 tablespoon of butter
flour tortilla
Cook hash browns in a non stick skillet until golden. In a separate pan cook sausage and then add onion and pepper. Cook until veggies are tender and the meat is cooked through. Add in diced ham.
Whisk seasonings, eggs and a couple tablespoons of milk together. Melt a tablespoon of butter in a skillet over medium high heat. Add in eggs and cook for a min. Switch pan to a low heat burner and stir. This method prevents the eggs from weeping liquid.
Build burrito by layer hash browns, meat, eggs and cheese. You can also add green salsa and sour cream. Be careful not to add too much it will get full very quickly. You can double wrap with another tortilla if you need.

Mexican Fried Rice
4 cups of cooked rice
1 1/2 cups of frozen corn
4 oz of sausage
chicken breast (if desired)
1 teaspoon of Worcestershire sauce
1 teaspoon of hot sauce
1 bell pepper
1 onion
3 cloves of garlic
3 jalapeno
1/2 teaspoon of red pepper flakes
1/2 teaspoon of chili powder
salt and pepper
flour (if you are doing fried chicken. leave out if you are shredding chicken)
Flour chicken and cook in a hot skillet with oil until golden on one side about 4 min. Flip over and then add sausage and cook through.
Dice up onions and seed and dice jalapenos and peppers. Add to skillet and cook until tender. Also zest in garlic
.
Add in corn and seasonings. Add in rice and cook for a couple min and all the rice is broken up. Adjust salt and pepper as needed.
Top with cheese and sour cream and cilantro.

Sugar Cookie Dippers
1/2 cup of butter
1/2 cup of powdered sugar
1/4 teaspoon of salt
2 cups of flour
1 teaspoon of vanilla
1 teaspoon of almond
Beat room temperature butter until fluffy. Slowly add in powdered sugar. Beat until fluffy and scrape down sides as needed.
Add in extracts and beat until fluffy. Slowly add in salt and flour until combined. You might need to add a little milk to make the dough some together. Refrigerate for two hours wrapped to plastic wrap.
Roll out on a floured surface and cut into rectangles. Bake at 325 for 12 min. Let cool.
Take cooled cookies
1 1/2 cups of chocolate chips
1 tablespoon of coconut oil
whatever toppings you like we used crush pb cups and sprinkles.
Melt chocolate chips and coconut oil in a double boiler until smooth.
Dip cookies in chocolate. Let excess drip off and then into topping and let cool.
Repeat with other kinds of toppings. I bought a bag a precrushed pb cups at URM. I ran them in the food processor to get them a little finer.

Chicken Saltimbocca Pizza
Chicken saltibocca is one of our favorite pasta dishes. Its what Chris wants me to make when ever we have people over so I decided to try making a pizza version. I made my own pizza dough but you can use store bought too. The sauce is very versatile so you can switch up the toppings.
Pizza dough
Sauce:
3/4 cups of cream
1/2 cup of milk
2 tablespoons of flour
juice from 2 lemons
1 cup of Parmesan cheese
2 tablespoons of butter
3 cloves of garlic
salt and pepper
capers
(Lemon and capers can be left out for different kinds of pizza)
Toppings:
chicken (Flour, salt and pepper to fry up) You can also use shredded chicken
fresh sage
1 cup of mozzerella
prosciutto ham
Take about half a cup of flour and whisk in some salt and pepper. Cut chicken into bite sized pieces and toss in flour. Place in a hot skillet and cook for about 5 min per side until golden. When the chicken is done use a spatula to cut pieces even smaller if desired. Remove chicken from pan.
Melt butter in the same skillet and as it does scrape up the bits from the chicken. This will add to the flavor of the sauce. Whisk in the 2 tablespoons of flour. Whisk until smooth and cook for 30 seconds. Add in cream and milk. Bring to a simmer and garlic and salt and pepper.
When the dough is risen and you are ready to assemble the pizza stir in cheese, juice in lemon juice, add capers and adjust the salt and pepper as needed.
Pre heat oven to 425.
Spread out dough onto pizza stone and pour on sauce. I like a lot of sauce and it will thicken up in the oven so a lot is okay. Sprinkle cheese on top.
Sprinkle on chicken and torn pieces of priscuitto. Top with lots of fresh sage. Let rest for 20 min. Bake at 425 for 20 min or until golden and bubbly.
After baking let rest for five min so it won't be so runny when you slice.

Parmesan Pretzels with Beer Cheese Sauce
Pretzels
1/2 cup of Parmesan
2 tablespoons of butter
1 teaspoon of yeast
3 cups of flour
1 tablespoon of sugar
1/2 teaspoon of salt
mix one cup of warm water with sugar and sprinkle yeast on top. Let rest for 10 min until bubbly.
Mix together dry ingredients and cheese. Cut in butter and then add yeast mixture. Knead in an electric mixer for 5 min. Let rise in a warm place for an hour or doubled.
Roll a pot of water to a boil. Roll out pieces of dough into bread stick shape. Slowly add 2 tablespoons of baking soda to water. It will foam a lot. Boil bread sticks for 30-60 seconds. Brush with melted butter and sprinkle with cheese. let rise fro 30 min.

Bake at 450 for 20 min or golden.
Sauce
3/4 cup of beer
2 tablespoons of butter
2 tablespoons of flour
1/2 cup of mozzarella cheese
1 1/2 cups of white cheddar
1/2 teaspoon of chile powder
1/2 teaspoon of peparika
salt and pepper as desired
Melt butter in a medium sauce pan. Whisk in flour and cook for 30 seconds. Add in beer and bring to a simmer
Whisk in spiced. Slowly melt in cheese in small batches. Add desired salt and pepper.
Serve warm.
Peanut Butter Brownie Parfaits
Brownie Layer
Brownie Mix
1 cup of chocolate chips
pb cups
1 eggs
1/3 cup of oil
Add wet ingredients and extra chocolate chips. Pour half of the batter into a square baker. Evenly space pb cups and then pour on the rest of the batter. Bake at 325 for 30-40 min. Until the center is set but gooey.
Ganache layer
1/2 cup of chocolate chips
3-4 cup of cream
Bring cream to a simmer. Pour over chocolate chips. Don't stir and let set for 5 min. Whisk until smooth and let rest for 15 min.
Peanut buter
1/2 cup of peanut butter
4 oz of cream cheese
3 cups of powdered sugar
1-2 tablespoons of milk if needed
Whisk together cream cheese and peanut butter in a mixer until smooth. Slowly add in the powdered sugar until fluffy. Add in a little milk to reach desired consistency.
Assembly:
Cooled brownies
ganche
pb cups
pb cream
I save my old jam jars so that's what I used but small mason jars would work too. Layer brownie, peanut butter, chopped pb cups, ganche. Repeat until full. Serve right away or chill
