Italian Sloppy Joes

These were quick and easy.  You can use left over spaghetti sauce but I didn't have any so I made some.  Hamburger could also be substituted for sausage but I like the flavor of sausage better.

 Take a pound of sausage or hamburger and brown in a hot skillet.  I like to use cast iron but any traditional skillet will work.

Break it up into small pieces
When it is brown and all the pink is gone drain off the excess fat and removed from skillet but don't clean the pan.
 
Dice up a red pepper. You can use any color but I like red best.
 


 Dice up a white onion
 In hot skillet add veggies

 Add several cloves on grated garlic. I like a lot but you can use less

 When they are brown add the meat back


Mix thoroughly together
 Add a can of tomato puree

 Bring to a simmer

 Add a couple tablespoons of Italian seasoning, one tablespoon of black pepper and a little salt.
 If you like a little extra heat add some red pepper flakes it adds a nice flavor.



 Slice some bread and place on a cookie sheet and spray with cooking spray or oil
 Thinly slice mozzerella cheese


 Spoon sauce onto bread and but into a 400 oven for 5 min

 Remove hot pan from over and place some cheese on each and then place under broiler for 2-3 min. It doesnt take long so keep a close eye so it doesnt burn.
