Crumb Cake

This is so yummy is great as coffee cake or a desert.
 Its important to make the topping first so the flour can relax or it will be too tough.  Here is what you need. 1 stick of butter (melted), 1/3 cup of brown sugar, 1/3 cup of white sugar, 1/8 teaspoon of salt, 1 teaspoon of Cinnamon, 1 3/4 cup of cake flour.
 Mix dry ingredients together.


Drizzle in the melted butter and mix together and let rest while you make the batter.

 
Topping:
 1 1/4 cup of cake flour, 1/2 cup white sugar, 1/4 teaspoon baking soda, 1/4 teaspoon salt, 6 tablespoons of butter cut into one tablespoon pieces, 1 egg, 1 yolk, 1/3 cup of butter milk, 1 teaspoon of vanilla
 I sure dried butter milk where you add water.  The directions are no the box but you can use the real stuff too.

 Mix dry ingredients in a mixer on low and then add butter one tablespoon at a time. Mix until thoroughly mixed.

Add egg, yolk, buttermilk and vanilla
 Mix until smooth about a min it will be clumpy at frist but then smooth out.
 Pour into a square baking pan.
 Crumble topping on a batter in pebble sized crumbs.
 Bake at 350 for 35-40 min until a knife comes out clean.



Enjoy with a good cup of coffee.
