Pepperoni Waffle Dippers
This is a nice simple savory waffle. You can use any kind of filling. Ham and cheddar would be good too.
3/4 cup of flour
1/4 cup of corn starch
1/2 teaspoon baking powder
1/4 teaspoon of baking soda
3/4 cup or more mozzerella
diced pepperoni
2 cloves of garlic
1 egg
1/3 cup of oil
1 cup of butter milk (I used powdered)
1 tablespoon of Italian seasoning
Whisk together dry ingredients. (Add buttermilk powder if you using dry. If not add buttermilk to wet ingredients) Mix in chopped pepperoni and cheese.
Whisk together one cup of water(or buttermilk) oil and egg. Gently fold into flour mixture.
Cook in a hot waffle iron. Serve with tomato sauce.
Mini Apple Crisp
Topping:
1/2 cup of brown sugar
1 stick of butter
1 tablespoon of cinnamon
1/3 cup of flour
1/2 cup of oats
1/4 cup of white sugar (not in picture)
Filling:
1/2 cup of brown sugar
1 tablespoon of cinnamon
2 apples (I used Granny Smith)
Optional:
Caramel Bites
Ice Cream
Mix together oats, brown sugar, white sugar, flour. But butter in so in is the consistency of course sand.
Peal and slice the apples. I used my mandolin slicer. Place half the apples in a small oven safe bowl. Sprinkle the remaining cinnamon and brown sugar on top.
Sprinkle topping on top. Bake at 350 for 20 min or until golden and bubbly. Sprinkle caramel bites on top and place in oven for a min or two to melt.
Top with ice cream.

Pizza Bake
This is a simple variation on pizza. You can use any topping that you like.
Tomato sauce
Ground Sausage (8 0z)
Mushrooms
Pepperoni
Olives
2-3 Cloves of garlic
Mozzarella cheese
Italian seasoning
seasoning salt
fresh basil
Pizza dough (not in picture)
Zest garlic into tomato sauce. Add about 1 teaspoon of seasoning salt and 1 tablespoon of Italian seasoning. Chop up basil and stir in.
Chop up pepperoni, mushrooms, olives and cube up the cheese.
Take risen pizza dough and pull off small pieces and place in the bottom of a square baker. Spoon sauce over dough
Layer on toppings. I like a lot of toppings but you can do whatever you like.
Top with cubed cheese. Bake at 400 for 40 minutes. Until golden and bubbly. Let rest for 5-10 minutes before serving.

Green Enchilada Bake.
This is basically enchiladas but without all the mess of having to roll up. I added in green rice but you don't have to. I used pulled pork but you can use any meat.
1/2 cup of uncooked rice
pulled pork
corn tortilla
3 cups of shreeded pepperjack
1 16 oz container of sour cream
2 cups of green salsa
Bring on cup of water to a boil and add rice and then one cup of green salsa. Reduce heat to medium low and cook covered for about 20 minutes.
Mix two cups of green salsa with sour cream
Layer tortilla, rice, pork, cheese in a square baking dish. Then top with a little sauce and then repeat until full.
Top with remaining sauce and extra cheese. bake at 350 until bubbly.
Top with cilantro and Mexican sour cream.

1/4 cup of sugr
1/4 cup of brown sugar
3 tablespoons of esspresso powder
1 1/2 cups of water
1 bag a chocolate Riesens
1 cup of sugar
3/4 cup of flour
3/4 teaspoon of baking powder
3/4 teaspoon of baking soda
1/4 cup of cocoa powder
1/2 teaspoon of salt
1 egg
1/2 cup of milk
1/4 cup of oil
3 teaspoons of vanilla
Some of the ingredients re added separately which is why they are listed twice.
Mix brown sugar, 1/4 cup of cocoa powder, espresso powder, water, 1/4 cup of sugar. Bring to a simmer over medium heat.
Unwrap chocolates and place evenly in the bottom of square baker.
Mix flour, 3/4 cup of sugar, 1/4 cup of cocoa, baking powder, baking soda, salt. Mix to combine. Then beat in milk, egg, vanilla, and oil for two minutes.
Pour cake mixture over chocolates and then coffee mixture. Do not stir. Bake for 45 minutes at 350. Then let it rest for 15 minutes.
Serve warm with ice cream.

Blue Cheese Peach Cristini
There is a local cocktail bar that has a yummy peach and blue cheese cristini that I love so I decided to give it a try.
French Bread or Baaguette
Fresh Peaches
Blue Cheese
Olive Oil
Garlic
Honey
Pre heat oven to 400. Slice several medium thickness slices and brush with olive oil. Toast in the hot oven for about 7 minutes until slightly golden.
While the bread is in the oven peel and slice up the peaches.
Peal one large garlic clove and cut in half. Rub across the hot bread.
Put a couple slices pf peach on each pieceof bread. Carefully put some blue cheese on top. Be sure they stay on mine kept falling off. Toast for another 7ish minutes or until the cheese is melted and slightly golden. Once removed from the open add a dollop of honey on top. It will thin out from the heat and cover the whole bread.
Enjoy with coffee or a cocktail or both.

Chicken Parm Pepperoni Pizza Rolls
These use a basic pizza dough and you can stuff them with anything and use any kind of sauce too. I chose to use chicken, pepperoni, tomato sauce, and mozzarella.
You can use store bough dough if you like but I like mine. After the dough has risen start with the filling. None of these measurements are precise.
Dice up chicken and toss in some flour and cook in a skillet.
Take a handfull of dough and press flat so its about 8inches across. Spread some sauce on the middle and then a few pieces of pepperoni and cheese and top off with a couple pieces of chicken.
Pinch closed and let rest while the oven heats to 425.
Bake at 425 until golden brown about 20 min. Let rest for five min after baking and then eat.
