While Chris was gone for a week I decided I would only have dinners with blue cheese in it. He's not a big fan of blue cheese and its one of my favs.
I prepped these in the morning and then popped them in the oven later. I mixed them by hand but you can use a mixer too.
None of the measurements are exact.
Mushrooms (I like the brown ones but white are fine too)
1 package of cream cheese
2 cloves of garlic
2ish tablespoons of sun dried tomatoes
1/2 cup of blue cheese
plash of balsamic vinegar
salt and pepper to taste.
Add a couple cloves of minced garlic and sun dried tomatoes to cream cheese.
Add blue cheese, vinegar, salt and pepper and mix.
Wash mushrooms and pull the stems off. They should come right off. Spoon some of the filling in the middle and bake at 425. For about 20 min or until slightly golden and tender and bubbly.
I had some extra filling so I put in on a baguette and toasted them and it was very good.

Caprese Quick Bread
1 1/4 cups of flour
1 cup of bread flour
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1 teaspoon of salt 4ish or more is always better of fresh mozzerella
3 tablespoons of fresh bail
1/2 cup of sun dried tomoatoes
2 eggs
2 tablespoons of olive oil
1 1/4 cup of butter milk (I used powdered)
Whisk together all the dry ingredients including and powder for the powdered buttermilk.
Chop up basil and cube up the cheese.
Chop up the sun dried tomatoes and mix into flour.
Whisk together the water from the powdered buttermilk, eggs, and oil and fold into the flour mixture. Put in a loaf pan.
Bake at 425 for 30-35 min until golden and a knife comes out clean. It can be tricky to tell because the cheese might come out on the knife.
Serving warm is best.

French Toast Bake
These was quick to make the night before and then bake in the morning.
1/2 loaf of french bread
2 cups of milk
6 eggs
tablespoon of vanilla
1 tablespoon of cinnamon
Wisk together eggs, milk, cinnamon, and vanilla until light and fluffy. The tare or cut the bread into bite size pieces. Pour together. Be sure it is thoroughly mixed. Let rest overnight or no less than two hours.
Now for the topping
2 teaspoons of cinnamon
1/3 cup of flour
1/2 cup of brown sugar
1/2 stick of butter
Mix together cinnamon, sugar, and flour. Then cut the butter into mixture until is resembles course crumbs.
Sprinkle onto of the bread and bake at 350 for 20-30 min. It will still have some liquid in it and that's okay. But it should be warm and bubbly. Top with syrup if desired.

Pretzel Chocolate Chip Cookies
This is a simple combination of salty and sweet.
1 1/3 cup of flour
1/3 cup of white sugar
1/3 cup of brown sugar
1 cup of pretzel sticks
1 stick of butter
1 egg
1 tablespoon of vanilla
1/2 teaspoon of baking soda
1 tablespoon of corn starch
Combine butter, egg, sugars, and vanilla in a mixer on medium speed until creamy.
Add in baking soda, and corn starch and then slowly add flour until mixed in.
Add pretzels in. They will break up in the mixer.
Add in chocolate chips and scoop onto a cookie sheet. Bake at 375 for 12ish min.

Green Chile Chicken
I served this with lime rice. You need to maride the chicken for several hours or overnight.
Marinade:
1/2 cup of oil
chicken breasts
1-2 chipolte peppers in Adobo
1 teaspoon of cummin
3 coloves of garlic
1/2 teaspoon of salt
1 teaspoon of pepper
juice of two lime
Place oil, peppers, and garlic in food processor or blenders. Then add cumin, salt, pepper and lime juice and blend again.
Cut chicken into smallish pieces. Marinade overnight and grill when ready to serve.
Now take a couple mild green chiles. i used Anaheim most mild varieties are fine. Slice in half and seed and place under the broiler until mostly black.
Dice up the chiles and place a few on each piece of chicken and top with a slice of pepper jack cheese and place in warm oven to melt.
Serve with lime rice and top with crema.

1 brick of cream cheese
a couple cups of shredded chicken
1 jalepno diced and seeded
1 cupish of pepper jack cheese
chopped cilantro (I was out)
corn tortilla
salt and pepper to taste
Place add the ingredients in the mixer and gently mix. Place a couple tablespoons on a corn tortilla and roll up.
Bake at 375 for about 12 min. or until slightly golden. You can also cook them in a skillet with some oil.
Serve with Mexican rice, salsa and sour cream.

Chicken Teriyaki
It took me about 15 minutes to make. The chicken can be made in the time it takes to cook the rice.
1/2 cup of brown sugar
1/2 cup of soy sauce
3 cloves of garlic
1 tablespoon of fresh ginerg
3 tablespoon of honey
1 cup of water
plash of rice vinegar
2 tablespoons of corn starch

chicken thighs
salt and pepper

Whisk together minger ginger, garlic, soy sauce, brown sugar, water, vinegar, and honey. Bring it to a boil and boil for 3 min. Be sure to watch it because it can boil over.
Whisk in corn starch and boil for about a min until thick. Remove from heat.
Sprinkle both sides of chicken with salt and pepper. Grill for about 3 min per sides and then let rest for five minutes.
Slice chicken and place onto of cooked hot rice. Spoon on sauce and sprinkle with sesame seeds.
