Pretzel Chocolate Chip Cookies

This is a simple combination of salty and sweet.
1 1/3 cup of flour
1/3 cup of white sugar
1/3 cup of brown sugar
1 cup of pretzel sticks
1 stick of butter
1 egg
1 tablespoon of vanilla
1/2 teaspoon of baking soda
1 tablespoon of corn starch
Combine butter, egg, sugars, and vanilla in a mixer on medium speed until creamy.
Add in baking soda, and corn starch and then slowly add flour until mixed in.
Add pretzels in.  They will break up in the mixer.
Add in chocolate chips and scoop onto a cookie sheet.  Bake at 375 for 12ish min.

Green Chile Chicken

I served this with lime rice.  You need to maride the chicken for several hours or overnight.
Marinade:
1/2 cup of oil
chicken breasts
1-2 chipolte peppers in Adobo
1 teaspoon of cummin
3 coloves of garlic
1/2 teaspoon of salt
1 teaspoon of pepper
juice of two lime
Place oil, peppers, and garlic in food processor or blenders.  Then add cumin, salt, pepper and lime juice and blend again.
Cut chicken into smallish pieces. Marinade overnight and grill when ready to serve.
Now take a couple mild green chiles.  i used Anaheim most mild varieties are fine. Slice in half and seed and place under the broiler until mostly black.
  Dice up the chiles and place a few on each piece of chicken and top with a slice of pepper jack cheese and place in warm oven to melt.
Serve with lime rice and top with crema.

Chicken Tiquitos

This was a quick week night dinner.
None of these are precise.
1 brick of cream cheese
a couple cups of shredded chicken
1 jalepno diced and seeded
1 cupish of pepper jack cheese
chopped cilantro (I was out)
corn tortilla
salt and pepper to taste
Place add the ingredients in the mixer and gently mix.  Place a couple tablespoons on a corn tortilla and roll up.
Bake at 375 for about 12 min. or until slightly golden.  You can also cook them in a skillet with some oil.
Serve with Mexican rice, salsa and sour cream.

Chicken Teriyaki

It took me about 15 minutes to make.  The chicken can be made in the time it takes to cook the rice.
1/2 cup of brown sugar
1/2 cup of soy sauce
3 cloves of garlic
1 tablespoon of fresh ginerg
3 tablespoon of honey
1 cup of water
plash of rice vinegar
2 tablespoons of corn starch
Not in picture:
white rice
chicken thighs
salt and pepper

Whisk together minger ginger, garlic, soy sauce, brown sugar, water, vinegar, and honey.  Bring it to a boil and boil for 3 min.  Be sure to watch it because it can boil over.
 Whisk in corn starch and boil for about a min until thick. Remove from heat.
Sprinkle both sides of chicken with salt and pepper.  Grill for about 3 min per sides and then let rest for five minutes.
Slice chicken and place onto of cooked hot rice.  Spoon on sauce and sprinkle with sesame seeds.

Chicken Parmesan Sliders

I used basic store bought sauce and chicken breasts.
There are no exact amounts
* tomato sauce
*fresh basil
*fresh mozzerella
*chicken breasts
*flour
*panko bread crumbs
*Small rolls (I like pretzel rolls from Costco)
*Oil
Pound or slice chicken to about 1/2 inch and then cut into pieces about 3 inches long.  Mix bread crumbs and flour together and dredge chicken.  Heat a skillet with oil and then place chicken in the skillet.

 After about 3-4 min flip when gold and then cook other side.  Remove when done.
While the chicken is cooking heat sauce and add fresh basil.  Toast the rolls in a skillet.
Spoon a little sauce onto each piece of check and a piece of cheese.  Place under the broiler to get the cheese golden.
Place a piece of chicken on a bun and top with basil and extra sauce if you want.

Chocolate Sweet Rolls

This is a basic cimmon roll but with chocolate chips instead of cinnamon.  Its a simple no knead recipe.
2 cups of milk
1 cup of brown sugar
1 cup of white sugar
1 cup or more chocolate chips
1/2 cup of oil
4 tablespoons of butter
1/2 teaspoon of salt
2 teaspoons of instant yeast
1 tablespoon of vanilla
4 1/2 cups of flour
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
mix mil, white sugar, oil in a medium sauce pan and warm. Do not boil but you want it close to around 100.
Sprinkle yeast on top and let rest of 10 min it should be bubbly.
Mix 4 cups of the flour. It will be sticky and cover and place in a warm place.  Let it rise for about an hour.

Once it has risen mix in the rest of the flour, salt, baking powder, and baking soda.  Refrigerate or roll out into large rectangle.
Soften the butter and spread on dough.  Sprinkle with brown sugar, chocolate chips and vanilla.
Roll up and slice into 12 pieces.  Let rise for 30 min while the oven heat ups to 375.  I only baked 4 I wrapped the rest up and stuck them in the freezer for later use.
Bake at 375 for about 20 min until slightly golden.  Let cool and then glaze with powdered sugar glaze.
