For these pretzel bites I used bread flour and they were much better.
Pretzel
1 1/2 cups of warm water
4 1/2 cups of bread flour
1 stick of melted btutter
2/3 cup of baking soda
2 tablespoons of brown sugar
2 1/4 teapsoons of yeast
2 1/2 teaspoon of salt
1 egg
Mix butter, warm water, brown sugar and yeast. Let it rest for about 5 min until foamy
Add in salt and slowly mix in flour until it becomes a ball. Knead for about 5 min.
Place in a greased bowl in a warm place until doubled. I turn on my oven to 200 while making the dough and then place dough in there and turn off oven.
Turn dough onto counter and flatten into a disk shape and then cut into eight triangles.
Roll out into a 1 1/2 foot pieces and then cut into 1 inch pieces.
Bring a large pot of water to a boil and add baking soda. Boil pieces for about min.
Whisk egg and a little water and brush onto pretzel bites. Sprinkle on large salt crystals. Bake at 425 for about 15 min until golden brown.
Now on to buffalo sauce. Its not that different from a mac and cheese sauce that I make.
3 oz of cream cheese
1 1/2 cups of milk
1 tablespoon of butter
1 tablespoon of flour
1/3 cup of wing sauce
1 or more cup of cheddar cheese
Melt butter in a sauce pan and the add the flour and cook for a min
Add milk and simmer for about five min until it thickens. Whisk in cream cheese
Stir in cheese
Stir in wing sauce. It would be great with a little blue cheese too.
