They make this at the Olive Garden and I thought I'd give it a try. It was good. I can always judge how good something is by if my husband wants to take it in his lunch or if he wants to again.
1ish pound of chicken thighs. I buy it in pouches at Costco so this was one pouch.
1-2 carrots
1 onion
1 lb of Gnocchi
1 carton of chicken broth (4 cups)
1-2 cups of spinach
4ish cloves of garlic
2 tablespoons of cornstarch
1/2 teaspoon of parsley
1/2 teaspoon of thyme
Dice up chicken into a medium sauce pan over medium heat. I cut my using my kitchen sheers. Then and minced or pressed garlic into pan and cook for a couple min.
Peel and shred the carrot using a large grater. I ended up using only one carrot but you can use two if you like. Add to the pot with the chicken.
Dice up onion and add to pot and cook till transluscent.
Add spinach in and thyme and parsley and cook for a min.until all the veggies are soft.
Add in chicken broth and bring to a simmer. I made it till this point in the morning and then stuck it in the fridge and it was quick to finish off at dinner time.
Return pot to a simmer and add in gnocchi. Simmer for a couple of min.
Add in cream and stir in cornstarch and simmer for a few more min. Taste test and check the seasoning level and add salt and pepper to taste.
Serve up and top the grated Parmesan cheese.
