I started of by making on own salsa but it can be done ahead of time you can also use store bought fresh is best.
salsa
5ish fresh tomatoes
1 onion
2 jalepenos (less is heat senstive
2 avacados
3-4 cloves of garlic
1 bunch of cilantro
1 teaspoon of cumnin
salt to taste
juice of about 3 limes
mango is good too but they didn't have any good ones at the store.
I started by dicing up an onion but you can do it in any order
To dice up the tomatoes you want to remove the membranes so you don't have all that extra liquid. Start by quartering them and then removing the membranes and slicing into planks and then slice across the planks.
Do the same with the peppers. Remember the heat is in the membrane and seeds so be sure to get most of that out.
Cut avocados in half and slice into planks and then crosswise to dice.
Mince up garlic and roughly chop cilantro and gently mix.
Add cumin, desired salt, and lime juice.
It works best if you marinade the chicken before you start. Take some chicken breasts or tenders, seasoning salt, lime juice, garlic, red pepper flakes, chilli oil, chilli powder
Add 1/2 tablespoon of seasoning salt, 1/4 teaspoon of red pepper, 1 teaspoon of chilli powder. Press 3-4 cloves of garlic
Add a couple dashes of chilli oil, and juice from a lime and then add a little water and marinade for at least 30 min.
Then grill or cook in a skillet
Now on to the beans
1 teaspoon of seasoning salt
1 teaspoon of red wine vinegar
1 can of pinto beans
1 teaspoon of chilli powder
3 cloves of garlic
Dice up an onion. Cook in a skillet on medium with some butter and add in garlic. Cook until tender. Add seasonings and cook for a min.
Start by rinsing beans and then process in the food processor with vinegar and about 1/4 cup of water and then stir in cooked onion.
Now on to the assembly of the nachos

Preheat oven to 425. I baked it on oven safe plates but you can use a cookie sheet too. Spread chips in a then layer and generously sprinkle with sharp cheddar cheese.
Dot the beans and diced up chicken. The key is to not bake with things that had liquid. You can add those after they come out of the oven.
Bake until golden and toasty.
Add olives, salsa, sour cream, and cilantro. You can use any toppings that you like. This is what I like.
