Funfetti Shortbread Cookies




2 1/4 of flour
1 1/2 tablespoon of cornstarch
1/8 teaspoon of salt
2 sticks of butter
1/2 cup of brown sugar
2 tablespoons of vanilla
sprinkles
at least 6 oz of dark chocolate
1-2 tablespoons of shortening
1 egg
Cream together butter and sugar
Add in cornstarch and salt
Cream in vanilla and egg
Slowly add in flour
Slowly add in sprinkles (about 5-6 tablespoons)
I used a small (1 tablespoon size) cookie scoop.  Scoop and flatted with your fingers or a greased glass.  Bake for 8-10 min at 350.
Roughly chop chocolate and microwave chocolate with shortening on half power at 30 second intervals until glossy.
Dip cooled cookies in chocolate and then sprinkle with sprinkles.  Let the chocolate harden on wax paper.


Chocolate Sandwich Cookies with Cookie Dough FIlling

Cookies
1 cup of butter
3/4 cup of brown sugar
1 cup of while sugar
1/2 cup of chocolate chips
3/4 cups of cocoa powder. (I like Hershey's Special Dark)
2 eggs
2 teaspoons of vanilla
1 3/4 cups of flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
2 teaspoons of espresso powder

 Cream together softened butter and sugars on medium speed in a mixer until light and fluffy.
Add in vanilla, espresso powder, and eggs.  You might need to scrape down the sides.
Add in baking soda, baking powder, and salt
Slowly add in cocoa powder and mix until smooth.
Slowly mix in flour
Melt the chocolate chips in the microwave on half power checking every 30 seconds.  When melted and glossy add into dough.
Scoop the cookie dough into even balls with a medium cookie scoop
Flatten using a greased glass and bake at 350 8-10 min until slightly cracked on top.
Now on to the filling
14 oz of marshmallow fluff
2 cups of flour
1 cup of butter
2 tablespoons of brown sugar
1 tablespoon of vanilla
mini chocolate chips
Beat softened butter until flight and fluffy
Add in vanilla and sugar
Add in flour.  It will be like course sand.
Add in marshmallow fluff and scrape down sides as needed. Gently add in chocolate chips.
Scoop about a tablespoon or two of filling and sandwich cookies.


Ultimate Nachos

I started of by making on own salsa but it can be done ahead of time you can also use store bought fresh is best.
salsa
5ish fresh tomatoes
1 onion
2 jalepenos (less is heat senstive
2 avacados
3-4 cloves of garlic
1 bunch of cilantro
1 teaspoon of cumnin
salt to taste
juice of about 3 limes
mango is good too but they didn't have any good ones at the store.
I started by dicing up an onion but you can do it in any order
To dice up the tomatoes you want to remove the membranes so you don't have all that extra liquid. Start by quartering them and then removing the membranes and slicing into planks and then slice across the planks.
Do the same with the peppers.  Remember the heat is in the membrane and seeds so be sure to get most of that out.
Cut avocados in half and slice into planks and then crosswise to dice.
Mince up garlic and roughly chop cilantro and gently mix. 
Add cumin, desired salt, and lime juice.
It works best if you marinade the chicken before you start.  Take some chicken breasts or tenders, seasoning salt, lime juice, garlic, red pepper flakes, chilli oil, chilli powder
Add 1/2 tablespoon of seasoning salt, 1/4 teaspoon of red pepper, 1 teaspoon of chilli powder.  Press 3-4 cloves of garlic
Add a couple dashes of chilli oil, and juice from a lime and then add a little water and marinade for at least 30 min.
Then grill or cook in a skillet
Now on to the beans
1 teaspoon of seasoning salt
1 teaspoon of red wine vinegar
1 can of pinto beans
1 teaspoon of chilli powder
3 cloves of garlic
Dice up an onion.  Cook in a skillet on medium with some butter and add in garlic.   Cook until tender.  Add seasonings and cook for a min.
Start by rinsing beans and then process in the food processor with vinegar and about 1/4 cup of water and then stir in cooked onion.

 Now on to the assembly of the nachos

olives
beans
chicken
cheese
cilantro
chips
Preheat oven to 425.  I baked it on oven safe plates but you can use a cookie sheet too. Spread chips in a then layer and generously sprinkle with sharp cheddar cheese.
Dot the beans and diced up chicken.  The key is to not bake with things that had liquid.  You can add those after they come out of the oven.
Bake until golden and toasty.
Add olives, salsa, sour cream, and cilantro.  You can use any toppings that you like.  This is what I like.
