Chicken Saltimbocca is one of my favorite dinners and now it is combined with pasta another fav.
Here is what you need.
Pasta
a few tablspoons of flour
fresh sage (I bought two small packages)
small jar of capers
2 lemons
a couple chicken breasts
1ish cup of cream
1 cup of white wine
Parmesan
salt and pepper
several pieces of prosciutto
Roughly cop up sage and hame
Heat some oil in a skillet and add sage and ham and cook until slightly browned and welted.
Remove from skillet and then use the same skillet for chicken
Dredge chicken in flour and then cut up into little pieces and then brown in skillet add more oil as needed and then keep pan dirty it will help form a nice sauce.
Take dirty pan and add about a cup of white wine and simmer for about 2 min and then add cream and bring to a simmer
Add capers and then add hot pasta. Add chicken and ham back to pasta.
Add salt and pepper to taste and then add milk or cream if needed for desired consistency and then add juice of tow lemons.
Top with Parmesan. This might be a new favorite.

Sun Dried Tomato and Basil Pesto
This is pretty much dump in food possessor and then heat and its all good.
Here is what you need.
pasta
Parmesan
garlic
basil (I bought a large container)
sun dried tomatoes
1ish cup of cream
salt and pepper
Dump into food processor and process until pretty smooth.
Remove sun dried tomatoes and then remove large stems from basil leave and process
Heat some olive oil in a skilled and then add several cloves of presses garlic and then add tomatoes and heat. for several min.
Top with grated Parmesan.

Add cream and mix thoroughly
Add hot pasta and mix in basil. Season with salt and pepper and then add a little more cream or milk to desired consistency.

SKillet Breakfast
This is far from healthy but so yummy. Maybe eating it with a smoothie will make it healthier.
Here is what you need: (amounts can vary depending on size of your pan. Preheat oven to 350
3ish cups of hashbrowns (enough to cover skillet)
1 diced red pepper
1ish (or more) shredded chedder
ground sausage
a few tablespoons of vegtable oil
dash or Johnny's salt
a few red pepper flakes
4ish eggs
Heat some oil until is shimmers. Add hash browns and sprinkle with Johnny's salt and red pepper flakes
Dice red pepper and add to another heated skillet with shimmering oil and cook over medium heat until some color has formed
Add sausage to skillet and breakup into small pieces and cook until all pink is gone.
When golden flip hash browns and add sausage and peppers and cover with cheese and place in oven
Fry the desired amount of eggs and place on top of cheese. (You might have to fry in batches)

Marinated Chicken Pita with Pesto Pasta Salad
This is nice and springy and not that hard. You can use any kind a marinated grilled chicken. Next time I think I would take off more of the marinade so its not so yellow.
Here is what you need:
Chicken breasts or tenders
1/2 cup of plain Greek Yogurt
5-6 good sized garlic cloves (minced)
juice of half of a lemon
1/2 teaspoon of tumeric
salt and pepper
Add all the ingredients in a bowl and mix together
Add chicken to bowl and coat and marinate for at least 8 hrs oven night is best.
Here is what you need for the pitas.
Pita bread
Tzatziki Sauce
marinated chicken
tomatoes
lettuce
Feta cheese
(you can use onions too. I don't like raw onions)
Grill chicken and warm pita in low oven or in microwave
Take warm pita and spread with Tzakziki Sauce
Sprinkle with Feta and add lettuce
Add dice tomatoes and cubes chicken

whatever veggies you want

Salted Caramel Cupcakes
Our local cupcake shop sells these salted caramel cupcakes that are absolutely amazing so I thought I would give them a try. These aren't as good but they are still pretty yummy.
Chocolate Cupcakes:
2 sticks of butter
4 tablespoons of cocoa powder
1 cup of boiling water
2 cups of flour (I had some leftover cake flour but all purpose is fine too)
2 cups of sugar
1/4 teaspoon of salt
1/2 cup buttermilk real of powdered
2 eggs
1 teaspoon of vanilla
1 teaspoon of baking soda
Caramel:
This is easy its simply dump mix and simmer
1/2 cup of heavy cream
1/2 stick of butter
1 cup of brown sugar
1 teaspoon of salt
1 teaspoon of vanilla
Frosting:
2 sticks of butter
1 package of cream cheese4
3/4 cup of salted caramel sauce
3ish powdered sugar
1 teaspoon of salt
Cupcakes:
Melt the butter and stir in cocoa powder and then add 1 cup of boiling water and set aside.
Whisk eggs, vanilla, and baking soda, and butter milk or water for the powdered buttermilk (the powder goes in with the dry mixture
Stir together sugar, flour, buttermilk powder, and salt
Add egg mixture to dry ingredients and then add chocolate mixture. Be sure to mix thoroughly or you will get white spots in your cupcakes like I did.
Fill cupcake papers 2/3 with batter and then bake at 350 for 15-18 min and let completely cool.
Caramel:
Mix butter, brown sugar, cream, and salt into a medium sauce pan. Bring to a simmer and simmer for 5-7 min. It will bubble alot and its okay. When dome simmering add vanilla and remove to a bowl. Keep in fridge. It will become hard in fridge but just reheat in microwave or double boiler.
I filled my cupcake its not hard and then there is a nice surprise inside. Cut a little piece from the top and keep top piece.
Spoon a little softened caramel into hole and place top back on.
Frosting:
2 sticks of softened unsalted butter
8 oz of cream cheese
3/4 cup of salted caramel sauce
Whip the butter and then whip in cream cheese
Add caramel and then add powdered sugar to desired consistency and then add about a 1/2 teaspoon of sea salt
Frost cupcakes
Drizzle with some extra salted caramel sauce and then sprinkle with sea salt and refrigerate so caramel can firm up.
