This was a simple ice cream base with pureed strawberries added in.
Ice Cream:
3 cups of cream
3 cups of milk
2 cups of sugar plus 2 tablespoons for strawberries
9 egg yolks
1 pound of strawberries
1 tablespoon of vanilla
Whisk together milk and sugar in a large heavy sauce pan over medium heat. Heat until warm about 6ish min.
Whisk eggs vigorously eggs for about 2 min until light and fluffy.
Whisk in a little of hot milk into eggs so they don't scramble when you add them to warm milk. Do this a couple times and then pour egg/milk mixture into remaining milk. Heat over medium heat until it thickens about 5 min.
Whisk in vanilla and cream in off heat.
Roughly chop strawberries. Place strawberries and sugar in food processor or blender. Blend until a smooth puree.
Whisk in strawberry puree into ice cream base and refrigerate for several hours or over night so it thoroughly cool.
Freeze ice cream in an ice cream base. I have the freezer bowl for my mixer but you can use any kind.
Top with sliced strawberries or chocolate or both.
