Chicken marinade
Here is what you need:
1 cup coconut milk
2 tablespoons brown sugar
1 tablespoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon turmeric
1 teaspoon salt
chicken tenders
place 1 cup coconut milk in a bowl
Add 2 tablespoons of brown sugar
Add 1 tablespoon cumin
Add 1/2 teaspoon turmeric
Add 1 tablespoon of corianderMix together
Add chicken and marinade for at least 1/2 an hour
Peanut Dipping Sauce
1/2 cup of peanut butter
1 tablespoon minced ginger
1/3 cup chicken stock or water
1 tablespoon of honey
3 tablespoon rice vinegar
1/4 cup soy sauce
3-4 cloves minced garlic
1 tablespoon chile garlic sauce
Place 1/3 cup of water or chicken stock
Add 1/4 cup of soy sauce
Add 1 tablespoon of honey
Add 3 tablespoons of rice vinegar
Add 1 tablespoon chile garlic sauce
Add 1/2 cup of peanut butter
Mince garlic and ginger
Add minced garlic and ginger
Blend
Noodle Sauce
1/2 c. chicken broth
3 Tbsp. creamy peanut butter
1-2 tsp. Sriracha chili sauce (1 is mild with a bite, 1.5 is medium, 2 is hot)
1 1/2 Tbsp. honey
3 Tbsp. soy sauce
1 1/2 Tbsp. fresh minced ginger
2-3 cloves garlic, pressed or minced
8 oz. Udon or linguine noodles
Chopped green onions
Chopped cilantro
2 limes
Add 1/2 cup of chicken broth or water
3 tablespoons of peanut butter
1 1/2 tablespoons of honey and 3 tablespoons of chile sauce
Add 3 tablespoons of soy sauce
Add minced garlic and ginger
Mix under low heat
Cook chicken on hot grill
Cook noodles for a few min in boiling water
Spoon sauce on noodles and serve with chicken and dipping sauce
Serve with cilantro and lime juice
