Here is what we had for dinner. Tzatziki sauce, Greek chicken, rice pilaf, and saute zucchini. You need to prepare the tzatziki at least two hours before I made mine the day before.
Here is what you need. Olive oil, plain Greek yogurt, two english cucumbers, garlic, lemon, black pepper, and dill.
peel the cucumbers
Slice in half and then into small stripes.
Mince garlic
Sprinkle salt on cucumber and place in bowl and cover and let it rest for 5 min to draw some water out of the cucumber (I forgot to take a picture) Wring excess water out after five min similar to wringing water out of a towel.
Food process the cucumbers and garlic.
Stir in two cups of Greek yogurt
Add some black pepper, a table spoon of olive oil, and lemon juice (Remember to buy dill at the store so you dont have to wait for your husband to come home with it)
Mix all together
Mix in a tablespoon of dill when he gets home
Refrigerate for at least two hours
Sprinkle chicken with Mediterranean seasoning
Heat up some olive oil and fresh garlic
Cook chicken evenly
Remove from the pan and keep warm in the oven
Slice up the zucchini and add more garlic and live oil if needed
Add to same pan as the chicken with all of the leftover bits still in it
Sprinkle some of the same seasoning on it
I made rice pilaf to go with the chicken and zucchini
Dish up and serve with tzatziki sauce
