This week I made clam chowder. I love love love clam chowder but my husband more reluctant about it. He does not like soup or hot liquids but he liked this one enough to take left overs in his lunch.
Start by dicing an onion.
Melt a stick of butter to saute the onions and garlic
Peel and finely dice 4-5 garlic cloves and add to butter and onion to saute
Saute until tender
Whisk 1/2 cup of flour into onions and garlic
In will turn into a paste
Add 1 quart of milk
Finely chop and boil 4-5 red potatoes
Add 1/4 teaspoon of celery seed, 1/2 teaspoon of salt, 1teaspoon of black pepper (or more if you like), 1 teaspoon of thyme, 1 teaspoon of parsley, and 1 teaspoon of sage into milk mixture.
Add two cans of baby clams and stir and simmer until it thickens
Boil potatoes into tender
Stir in potatoes and simmer
Toast some sourdough bread with olive oil or use bread bowls
Remove when golden
Serve bread with chowder and top with parsley.
