Fancy Mac and Cheese

This was yummy and a fun spin off the original Here is what you need.
Some mushrooms. I like alot of mushrooms
salt and pepper
4 pieces of bacon
1 onion
4 tablespoons of butter
1/2 cup of grated Parmesan
1/2 cup Guyere
1/2 Fontina
1/2 cup of feta
1/2 cup blue cheese
1 lb of Macaroni
1/4 cup of flour
2 cups of milk
1/2 cup of cream
2 beaten eggs

 Chop mushrooms and spread on a baking sheet with olive oil and salt and pepper and roast  while you make the rest of the macaroni in oven at 325.
Cook 4 or so pieces of bacon and cool and chop up.  For the record I hate bacon. It was so gross with all that grease.
Saute some onion over medium heat until golden brown.

Grate all the cheese. The feta and blue cheese wont need to greate but maybe crumbled if you bought it whole.
Melt the butter in a large sauce pan and add the flour and cook for a min or so.
Add the milk and whisk for a couple of min until it thickens and add salt and pepper to taste.
Crack 2 eggs and whisk until light yellow.  Temper by add a little of the warm milk to the eggs and whisk and then add the whole mixture into the milk and whisk together.
Whisk in the cheese except for the blue cheese
Stir in the onion, mushrooms, and half of the blue cheese
Stir in cooked pasta and sprinkle bacon and the rest of the blue cheese on top and place under the broiler for a few min
Chris said it was pretty good which says a lot since it has mushrooms and blue cheese in it.

Messy Party Mix

This is supter easy and good but it is messy.
Here is what you need
10 cups of cereal I used rice and corn chex but you can have wheat too.
3 cups of powered sugar
1 cup of chocolate chips
2 cups of pretzels
1 cup of M and Ms
1/2 cup of peanut butter
1/2 cup of mutella
4 tablespoons of butter
a dash a vanilla
 Melt the butter, nutella, chocolate chips and peanut butter over a double boiler until smooth.
Mix the cereal together.
Mix the chocolate mixture into the cereal
Mix in powered sugar.  It will be messy. You can put it in a large bowl with a lid or a freezer bag and shake.
Add M and Ms and pretzels.
It is messy but so good.

Granola Bars

These were supper easy and yummy plus a good source of fiber and whole grain.
Here is what you need:

6 cups of rolled oats not quick oats.
4 Tablespoons of melted butter
1/4 cup of vegetable oil
1 teaspoon of salt
1 cup of dark brown sugar
1/2 cup of honey
1/4 cup of apple juice
1/4 cup of molasses
3 tablespoons of vanilla
1 1/2 cup of Rice Krispies
1 cup of wheat germ
3/4 cup of chopped peanuts

 Mix oats, salt, oil, and melted butter together
 Toast on a sheet pan in a 350 oven for about 20 min until golden brown.  Stir every 5 min so they toast evenly.

 In a sauce pan over medium heat stir together sugar, molasses, honey, apple juice

 Stir together rice krispies and peanuts and add to the oats
 
 Add is molasses and sugar mixture
 Thoroughly mix

 
Line a sheet pan and spray with cooling spray so it won't stick and you don't have to clean it.

 Spread out oat mixture on a sheet pan and cook for 20 min at 325 until golden

 Let cool

Chop into bars.  They were kind crumbly this time so you might want a little more glue but as a bonus I got some granola to go with yogurt form all the crumbs.


 Melt some chocolate chips over a double boiler until smooth

 Dip in part in chocolate and let cool

Italian Chicken Roll Ups

These are supper easy and go great with pasta.
 There is what you need some chicken breasts, 1 cup of ricotta, panko bread crumbs, 1 cup of mozzarella, a couple tablespoons of Italian seasoning,  melted butter, and basil leaves
 Pound meat to about 1/2 inch thick

Mix Italian, garlic, and a little salt and pepper with ricotta



 Place a couple basil leaves on each peace of chicken
 Smear about a tablespoon of ricotta mixture on top
 Sprinkle on the mozzarella
 Roll up
 Roll in melted butter
 Roll in Panko bread crumbs
 Bake at 350 for about 30 min until chicken is done and bread crumbs are turning golden

Serve with dipping sauce
