Ymmy Fried chicken tacos


Here is what you need for the chicken.  Some chicken breasts, cayenne pepper, chilli powder and ground cummn, and garlic to taste or taco seasoning.
Dice up the chicken and heat in a skillet over medium heat with seasonings. Remove chicken from the pan and set aside.
 Prepare your toppings.  Like olives, sour cream, sharp chedder, lettuce, salsa, and cilantro but you can use whatever you like.

Heat a couple of inches of oil in a skillet until hot over medium high ehat for several min.
Place some chicken in a corn tortilla
Place in oil and hold shut for several min to secure the fold.  Fry for 3-5 min and the flip and cook the other side until golden brown.

Cook several 

Fill. This can be a messy job but then are so good.

Beignets

 
Beignets are square small doughnuts from New Orleans.  They are small square doughnuts that are sprinkles with powdered sugar and you can dip them in chocolate or strawberries.
Combine milk, oil sugar, and salt over medium heat until it bubbles around the edges then removed from heat.



While the milk is heating mix yeast, 1 T sugar, salt and water and let rest for 10 min or until foamy
Add milk mixture and 2 cups of flour to yeast mixture and mix until smooth
Add egg

Add enough of the remaining flour until slightly sticky


Roll out dough and cut into squares and let rest covered by a clean towel for 30 min
After 15 min begin to heat the oil to 325 you need several inches of oil
 Place squares in hot oil for 4 min or until golden brown on one side
 Flip and cook for another couple min
Sprinkle with powdered sugar and enjoy

Bruschetta pasta

I have been on a cherry tomato kick.  My latest is a using it as a pasta sauce.  So make the some marinated tomatoes like for the bruschetta.  Dice cherry tomatoes, grate garlic, add olive oil, balsamic vinegar, salt and pepper and let it marinate preferably for at least a day.  The vinegar helps break down the tomatoes. 
Here is my tomato mixture after a few days.


Take a bunch of fresh basil and chop it.  I used stuff from my pots on my patio but from the store is fine too.
Mix in the basil to the tomatoes.
Roughly chop a bunch of fresh mozzerella.  I used most of a log you can never have too much fresh mozzerella.
But some hot cooked pasta in bowl I used angel hair but you can use regular spaghetti or linguini or whatever you like.

Mix in the tomato and basil mixture
Add mozzarella
Mix around and let sit for a few mins so the tomatoes and mozzarella can warm up from the hot pasta.
Add some salt, pepper, vinegar, olive oil to taste.
YUM.  My husband was less than excited about this dish until he ate and said it was good.

Brushetta

 
So I told my dear husband that I was going to make brushetta and he was less than pleased.  He is not a big tomatoes fan but he put his best foot forward and gave it a go and I appeased him by adding feta and fresh mozzarella.
So here is what you need.  None of this fixed proportions. Whatever meets your needs.  A couple tablespoons of olive oil, grape tomatoes (you can use red or yellow or cherry tomatoes too), a couple tablespoons of balsamic vinegar, several cloves or garlic, fresh basil leaves, a baguette, and fresh mozzarella and feta if you want and salt and pepper to taste.
Starts with a couple tablespoons of olive oil and grate a couple garlic cloves.  I have started using my zester and it comes out easier and much less mess and easier cleanup.
Add the balsamic vinegar. I love balsmaic vinegar.  What would I do without it? Life and food would be so boring.
Whisk together with fresh ground salt and pepper.
Finely chop a about 1 1/2 cups of cherry or grape tomatoes. Be sure to do it finely so you don't get huge chunks of tomatoes. 
There will a lot of left over juice and that's okay then that won't soak into your bread especially since we added oil and vinegar.
Mix into oil and vinegar mixture.
If needed add a little more oil, vinegar, salt and pepper and let marinate for at least 30 min so all the lovely flavor soak in.
Once the tomatoes marinate roll up the basil leaves so you can finely sliver the leaves.
You want a couple good table spoons.
Mix with tomatoes.
Grate so more garlic into some olive oil and generously brush onto both sides or thickly sliced baguette.
Broil for about 8 min until golden brown be sure to keep an eye onto it doesn't take long and I am always forgetting it and burning it.
Place a slice of fresh mozzarella on some of them
Spoon tomato mixture on all of the bread.
Sprinkle feta on some too because you can never have too much cheese especially feta.
Place under the broiler for just a couple min to warm the cheese.
Serve and enjoy.  You will die and go to heaven my tomato husband said they were good and I could make them again which in his language means he liked them.  He is never big on saying what I should make again.  Not a lot of feedback.  Be sure you have a napkin and fork because you will need them.
