I have been on a cherry tomato kick. My latest is a using it as a pasta sauce. So make the some marinated tomatoes like for the bruschetta. Dice cherry tomatoes, grate garlic, add olive oil, balsamic vinegar, salt and pepper and let it marinate preferably for at least a day. The vinegar helps break down the tomatoes.
Here is my tomato mixture after a few days.
Take a bunch of fresh basil and chop it. I used stuff from my pots on my patio but from the store is fine too.
Mix in the basil to the tomatoes.
Roughly chop a bunch of fresh mozzerella. I used most of a log you can never have too much fresh mozzerella.
But some hot cooked pasta in bowl I used angel hair but you can use regular spaghetti or linguini or whatever you like.
Mix in the tomato and basil mixture
Add mozzarella
Mix around and let sit for a few mins so the tomatoes and mozzarella can warm up from the hot pasta.
Add some salt, pepper, vinegar, olive oil to taste.
YUM. My husband was less than excited about this dish until he ate and said it was good.
