Cream Tea

 
So the other day I was feeling the traveling bug and wanting to travel again but alas I am stuck here and not able to travel so I had to remain content on my making my own cream tea instead of going to England myself. When I was in high school my family traveled to England and we loved cream teas. So here is my version.  The first problem I found was clotted cream it is a sweet cream that comes with scones but I couldn't find it so I did some research and found a good substitute. 
So here is what you need.  4 oz of Mascarpone (I found to at the Deli section of cheese), 1 cu cream, 1 t vanilla, and 1-2 T of sugar

My Mascarone came in an 8 oz package so it was about half of it.
Pour into a mixer and mix on medium speed until it starts to clott about 3 min


Now for the scones
Here is what you need. 2 cups of all purpose flour, 1 t baking powder, 2 T sugar, 1 t salt, 1 1/3 cup cream.  Preheat over to 375
Mix together the dry ingredients
Mix in the cream until it is clumped together.  Do not over mix. If it is sloppy add a little more flour.
Place on a floured surface
Roll out to an 1 inch thickness and cut it rounds or squares or triangles whatever you like.
Bake for 12 min
Now its time for the tea.
Boil the water




I used a nice earl grey but you can use whatever you like and I steeped it for about 2 min until it is a nice medium color.
 Place the scones on a plate
 Top with the clotted cream
 Top with jam I used some freezer jam that I made with the recipe on the Surejell package but you can use store bought too.
