Chicken Paresan

 
This was really easy and yummy  You will need about a cup of flour, 1 egg, about 1 cup of milk or cream, panko bread crumbs and some chicken breasts or tenders.


 Whisk the milk and egg together.  Dip the chicken in the egg mixture then in the flour then back in the egg and then in the bread crumbs.
 

 Brown chicken in a heated skillet with a little oil
 Flip after 4-5 min and then cook 3-4 more min

 Remove from skillet and place in over on 300 to keep warm and finish cooking
 Take about 1/2 can of tomato puree place it in a sauce pan and add a couple tablesoons of Italain seasoning and 3-4 cloves of grated garlic
 Simmer
 Be sure to add your linguini to some boiling water

 Remove chicken from the oven for just a min and spoon some tomato puree on each piece of chicken

 Grate a little mozzarella on the chicken and flip on the broiler for a few min. I used whole milk mozzarella because it melts better but you can use low fat.
 Add about 1/2 cup of cream to the rest of the tomato sauce.
 Mix with pasta and add a little salt and pepper.
 Remove chicken from the broiler be sure to check it often so it doesnt burn but you want it golden brown.

Quick and Easy Roasted Red Pepper Pasta

Here is what you need.  1/2 cup of cream, 1 pound of pasta, 1 jar of roasted red pepper, 1 medium onion, a few cloves of garlic, 1 cup of grated Parmesan cheese and a couple tablespoons of butter which I forgot to put in my pepper.

Finely chop 1 medium onion or 1/2 large onion and a few cloves of garlic to you have about 1 tablesppoon of garlic chopped or pressed. Saute in a hot skillet in a couple tablespoons of melted butter.
 Drain the peppers and roughly chop them and add them to the skillet

Cook them until most of the liquid is gone and the onions are tender.

Remove from skillet and either food process or I used my immersion blender.  Processes until smooth.
Melt a little more butter in skillet and return pepper and onion mixture back to pan and bring to a simmer.
Add 1/2 cup of cream
 
Add a good cup of grated Paresam cheese more is always better
 
 Add a good amount of black pepper and some salt
 Drain the pasta whatever kind you like I found these fun ones.
 Add sauce to pasta
 Mix together
 Chop some fresh basil
 Put in a bowl
Top with basil and some more cheese

Vodka Cream Pasta

 
This so yummy and pretty quick and easy.
Here is what you need a pound of pasta (I used mini bow ties but you can use anything) a couple table spoons of olive oil, 1 cup of cream, 1 T of butter, 1 small onion, 1 can of tomoatoe puree, a couple cloves of garlic, some red pepper flakes (if you want) 3/4 cup of Vodka (I used the cheapest stuff at the store) 1 cup of parmesan.


I only used half of my onion because it was large but if you have a small onion or like a lot of onion you can use a whole onion.  Finely mince the onion. You don't want large chunks of onion.  Heat a couple tablespoons of olive oil in a large skillet and add the onion, and then either press or grate a few cloves of garlic into the skillet.  I use my microplane zester to grate the garlic it is a lot easier to clean than my press.  Saute the onion and garlic until golden brown and little bits of brown starts sticking to the pan.  It is important to use a regular pan and not non-stick.  Those brown bits won't form in a non-stick pan and add good flavor.

Add 3/4 or 1 cup of vodka to the pan and lit simmer for 3-4 min.
Add the tomato puree and mix thoroughly
Add 1 cup of cream
Mix thoroughly
Add red pepper flakes to taste. We like a little snap in our food
Add a generous amount of black pepper and about 1 t of salt.
Whisk in 1 T of butter until melted in
Add about a cup or more great Parmesan cheese. Mix in and bring a simmer to be sure it is hot.
Add cooked pasta or sauce to pasta depending on the size of your pans.
Mix together and taste check for salt and pepper and pepper flakes. If it is took runny add a little more cheese.
